Roasted Brussels Sprouts


Ingredients

  • 1 1/2 pounds Brussels sprouts
  • 3 tablespoons good olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Directions

Preheat oven to 400 degrees F.

Cut the sprouts off of the stalk, cut off the brown ends and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper. Pour them on a sheet pan and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly. Sprinkle with more kosher salt ( I like these salty like French fries), and serve immediately.

NPR reported:


If you tune in to NPR for a news update you probably heard a bit about some Kentucky farms being plagued by a fungus called "late blight". We didn't feel it was thoroughly explained so here is our best effort to put your minds at ease about the tomatoes you will see in your shares this week!

Late blight is caused by a fungus-like organism that affects the leaves and stem of the plant, causing them to wither. It really has no affect on the fruit (the tomatoes themselves), except that with withered leaves and stems the fruit gets sunburned and ceases growing. It poses no risk to humans, except where the farmer's wallet is concerned.
